Wine in Demijohn to Bottle
I will probably spend some time this week writing along my wine story…. LOL! After 5 days the wine that we bought by demijohn now is for bottling. Yes, we just transfer the wine to bottles now, but some we just store it in the demijohn, storing it in a cool place like the loft. The time length of a wine is bulk aged, but whites generally be aged at least six months, Low acid, low tannin reds should be aged for 9-12 months. Aging is usually done under airlock, but long aging can be done in sealed protective basket, the seal that we provide is a solid cork.
